Matcha Latte Recipe & Chia Pudding

I have a long standing love affair with matcha latte’s and when I started the Whole30 diet I feared I would struggle to enjoy it without any sweetening (I had previously used Oat Milk which is DELICIOUS). Unlike coffee, matcha’s don’t have a crash like coffee does and are high in antioxidants, boost the metabolism and help to burn calories. Below are my recipe’s for sugar free, dairy free matcha and chia pudding:

Matcha Latte:

1 tsp of matcha powder (I use Clearspring Organic Premium Matcha Green Tea Powder)
1/4 tsp vanilla extract
1/4 tsp cinnamon
1 tsp brain octane oil (MCT)
1 spoonful of cashew butter
Heated sugar free Coconut Milk
Top up with hot water if necessary
Mix all ingredients in blender and serve!

Chia Pudding:

Half a cup of chia seeds
1 1/3 cup of Cashew Milk (option to blend in banana)
1/4 tsp cinnamon
Stir together – stir regularly until chia seeds create a pudding
Put in fridge
Add blueberries, raspberries, almond flakes and pomegranates for extra sweetness!
