Guilt Free Banana Bread

While I was on the Whole30 diet, I initially struggled with feeling like all I was eating was air. I was desperate for something substantial to satiate my appetite. While I was training to become a Life Coach, my better half kindly looked deeper into the foods we were allowed to eat and noticed that coconut and almond flour were both on the OK list. He found a recipe online that was Whole30 friendly (meaning no gluten, no dairy, no sugar, no grains!) and made me my first “healthy” banana bread. Despite being a bit spongy and moist, I thought it was delicious, and eventually set about to find the best recipe for both consistency and taste. I’m happy to say – I think this is it! This is the most delicious, guilt free treat I think I’ve ever had – and it only takes 35 minutes to make! It’s so good and so easy, you just have to be careful you don’t make – and eat – it too often!

RECIPE:

3 organic medium ripe bananas

2 organic eggs

1/2 cup coconut flour

1/4 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1 spoonful of activated almond butter

Mix together until you create a smooth paste

Optional: add fresh, organic blueberries, a sprinkle in cacao nibs & a spoonful of coconut yogurt

Use Ghee on your baking paper to avoid the bread sticking to it. Heat your oven to 175 celsius and once warm, place bread in the oven and cook for 35 minutes and enjoy! You can thank me later 😉
